I have recently come back to basic D&D through the OSR movement and it was like coming home after wandering in the wilderness for years.
I know exactly what you mean about the stats. The "roll to accomplish everything" standard set by newer games means that good stats and abilities are vital to accomplish anything. I remember looking at my first few LL characters stats and thinking they were rubbish and wouldn't last five minutes. But it's not until you play the game that you realise that the emphasis has shifted.
I was shocked by the differences and how much you can accomplish in a normal game session compared to 3.x onwards. Since going OSR I have bought the all the LL books, I play a BECMI campaign once a month and am now signing up to play Labyrinth Lord here.
I can't wait to get started

I'm pretty sure those stats qualify for a re-roll (sum modifiers of -1). You'll want to verify with the GM

I can just roll up another 1st level character and assign him a class and then roll on the hiring reaction chart until he caves or leaves, I suppose. How many can I hire?

As someone stated earlier, there may be enough players at this point that retainers are not needed. But if you really want one, it would be handled in-game. Pages 46 & 47 of the Labyrinth Lord core book indicate how the hiring is handled. As for level, the can be equal or lower level than you. I've been following this thread and I think it's great to play a PC with a low score. With a DEX of 4, maybe you could describe your character as 'missing a foot' or something similar (one leg is considerably shorter than the other, etc).
