Jake McCall's Public Speaking success will take effect next turn. The cowboys' actions for this turn (6 seconds) have already been stated. The liquored up cattle men will need successful Observation rolls to take heed of the speech. (The ones who succeeded last turn will act on it when the fighting stops.
They won't turn their backs on a member of the bunch who's in the middle of a violent encounter. Plus, they always enjoy watching a good fight. It's kind of rare to get to see one as a spectator, because they're usually also in one themselves at the time). Cowboy 1 will continue brawling with Sebastian when his action comes around. He failed his Observation roll for McCall's first Public Speaking success.
We'll do the Hoffmans' and the cowboys' actions after John Carry's and Paladin's posts.

The Hoffmans continue to stand and, shotguns ready.
Cowboy 1 blocks Sebastian's swinging gun butt arm. He looks for an opening for his own gun butt, but he can't get past Sebastian's threatening knife. Sebastian's gun butt strikes heavily across his face. He grunts Ugh! and spittle flies out of the side of his mouth.
Failed Coordination checks, no attacks possible because of the knife. Sebastian's second attack was a Haymaker. 3 damage, -3 to the opponent's rolls next turn.
Cowboy 3 says, Hit him Harvey! Hit that yella dog!
Cowboy 4 says Yeah, git in there Harvey!
Cowboys 5 and 6 watch the fight.
Cowboy 7, who is older and looks like he's in his early 40s, says, There ain't no way a he's gonna a beat a man holding a knife. Pull out yer own knife, Harvey! The fellow has a powerful, confident, commanding speaking voice. It might remind any war veterans in the room of the voice of an army officer.
Cowboy 8 Dan Rucker asks Preacher John Carry questions about morality and theology.
Cowboy 2 hears Jack McCall's advice, decides it's not worth it, steps back two paces and keeps an eye on Joos.

Turn 5 - Initiative and state actions phase

PCs, Cowboys, Hoffmans. We are now into the 25th through 30th seconds of the action.
Hoffman will glance over at the older cowboy who advised the fighting cowboy named Harvey to draw a knife. But he will remain behind the bar, shotgun across his chest.
The younger Hoffman will stay with his shotgun at the kitchen door.
Cowboy 1 (Harvey) will give up one of two attacks to draw a knife from his boot. He'll need a Coordination roll to smoothly and quickly do that and give Sebastian only +1 on his second roll. If he fails, Sebastian will get +3. Either way, Sebastian's second attack will require a successful Coordination or Observation roll, at half value (rounded up), to be able to do a second attack.
Cowboy 2 will, at the end of the Brawling phase, stomp across the floorboards to attack Joos from behind with a pistol butt. That will be at the end of the turn, with the attack happening next turn.

Cowboy 7 will clear his head some more and say to Cowboy 6, Take down the fencepost, take down the whole fence. Tackle that feller and I'll pin his knife hand and his gun hand. Do-- not-- let-- him--- raise that firearm, son. Got it?
Cowboy 6 lets out a Whoop! and pull his pistol's trigger, puts another hole in Hoffman's floor, and lights out toward the target. That being Sebastian standing in a fist fight with Cowboy 1 (Harvey), with a gun in one hand and wicked steel knife in the other. And switched between hands.
At the bang of a gunshot inside the hotel/saloon, Cowboy 8 Dan Rucker couldn't help but being more attentive to violence going inside than to theological discussion outside. He looks into the dark interior with eyes narrowed by the bright sun. He can't see a thing, it's like looking into a cave. Excuse me, Reverend. I got to go inside and do my part to make sure everything's alright. The lad pulls out a heavy single action pistol, draws the hammer back, and cautiously enters the saloon.

Hopefully my first attack should cosh the guy unconscious before he can draw a knife. My second attack looks to fail anyway.
If the cowboy draws a dagger to try and stab me, then I will shoot him.
Can someone get rid of the horses? What kind of saloon has several horses grazing at the bar.

From some of the player posts, I see that I didn't make it clear what the cowboys will do in Turn 5. Some draw pistols, but you know that they won't shoot in Turn 5. It looks more like they intend to use them a brawling weapons. Only Cowboy 1 can brawl this turn. Movement comes at the end of the turn. So the soonest they can brawl (or shoot) will be next turn (Turn 6).
Doos will have to move (turn around) before he can brawl, the same as his opponent (Cowboy 2) can't brawl this turn. His brawl rolls will apply next turn.
To clarify, the side that wins initiative always knows what the side(s) will do that turn, before they do decide on their own actions.

Paladin’s gun was out (though hidden from view just under the edge of an overturned table), waiting for a cowboy’s gun to take aim. He saw that cowboys 2, 4, and 6 were using their pistols as clubs.
Paladin was ready to shoot a gun out of the cowboys hand if he used it to shoot instead of club. Paladin wondered where the sheriff was.

Hoffman sees more weapons being drawn. It looks to him like a general brawl-- or worse-- is about to happen. He says in a loud but steady voice, There vill be no more fighteen in my dining room! Put yer veapons away, take yer horses outside, and come back and sit down! Und you vill behave like civilized human beings! It remains to be seen (next turn) what effect his Public Speaking effort will have on the red-eyed, wildly stumbling, three sheets to the wind, don't hardly know what they're doing, and quite besotted cowhands. But it was a forceful and commanding speech. Next turn Sebastian's and Doos's players can RP what effect it had on their characters.
At the sound of the yelling out and further commotion, a heavy-set middle-aged woman will appear at the kitchen doorway, beside Hoffman's son with is long fowling shotgun. (Which, the PCs know, is just as likely used for shooting jackrabbits and cottontails for the stew pot as for shooting flying fowl). The woman has her hands on her hips, one of which holds a long-barreled cocked single action revolver. She's got a scowl on her face and doesn't seem much daunted. On the contrary, it seems like she's looking around the room for who's the first troublemaker to shoot or club over the head first.
Hoffman's daughter, who helped serve the PC remains unseen after running to the kitchen, on dad's orders, is not seen.
PCs have all stated their actions except Jake, Preacher John Carry, and Doos (if he's going to change his action and post again). From there, we'll go to resolving the PCs' and NPCs' posted actions for this turn (Turn 5).
Situation overview: 20 seconds ago, cowboys came a-whooping and a-ridin into Hoffman's saloon, hotel, and pool shootin place in San Marcos, TX. San Marcos (pop. around 700) is a respectable town just 20 miles from Austin. A fight broke out in Hoffman's bar in San Marcos just 20 or 25 second ago. The sheriff has been sent for, but in the meantime, it's just the law off fisticuffs, knives, gun butts, and horses lifting tails in bars and dropping green droppings

Charlie yells, No weapons! Andreas draws his revolver, ready to use it if needed. Paladin sits at a table and observes, pistol drawn and under it.
Hoffman orders all weapons put away, all horses out of his dining room, and that everybody sit down.
Cowboy 2 moves to behind Doos. Cowboy 3 draws gun and knife and moves behind Doos. Cowboys 4 and 5 start to take their horses outdoors, but stop and yell warnings to Cowboy 1 brawling with Sebastian. Cowboy 6 shoots a hole in the floor and runs to behind Sebastian. Cowboy 7, the older cowhand, doesn't draw a weapon, but also runs to behind Sebastian. Cowboy 8 young Dan Rucker hears the shot and runs into the saloon.
Sebastian, knife in one hand and pistol in the other, delivers a haymaker clubbing blow to the cowboy the others call Harvey. He comes up with a knife from his boot. Doos grabs him from behind and throws him to the floor. The cowboy rolls and comes up with his knife in the air. Sebastian tries to strike another pistol blow, but can't find a safe opening in the knife defense. But Doos does. He jumps on the prone cowboy and gets an arm lock on his knife arm.
Cowboy 1 took 5 damage and -6 to his To Hit next turn. He can only punch with his left arm next turn. A grapple result of Throw will free him of the arm lock.

Who do you think cleans up the bloot? Me and my Maria Helga. Und ye'd better have money in yer pocket for the undertaker! Or it will be the buzzarts who vill lay you to rest! Does as Ludvig says and stop yer foolish fightin!"

Paladin - Turn 6
Paladin was relieved that guns weren’t being fired.
He remained ready to shoot a gun out of a cowboys hand if he used it to shoot instead of club.
Paladin considered talking, but enough words had been said. The cowboys just had to work out their piss and vinegar.

He shouts a warning to both Mr Doos and Cowboy 5 who he shoots.
