For my next action, (sorry if posted out of sync) , I will pistol whip Cowboy 1, hitting him over the head with the butt of my pistol or any other physical body location.
I think I get two brawling attacks in the turn. Also the pistol use adds +1 to the roll and +1 to any damage inflicted. I am trying to cosh the drunk senseless rather than stab him which might prove fatal. He is certainly not going to put either pistol or dagger away however much the cowboy insists.

So 15 scored first attack.
Damage resolved like this? Correct me if I read the book wrong. I hit him with a jab on his left arm which calculating wound severity from jab and location plus weapon, I score 0 = light wound.
A glancing blow, inflicting a -1 to hit penalty on his next brawl and a -2 wound severity. I hit him on his Left Shoulder, no body location modifier, -2 from glancing blow, +1 from weapon = 3, a Serious Wound.
Paladin, hearing Hoffman say no one had been sent to get the sheriff, decided to step outside and holler for the law. He figured the sheriff was on his way anyway, with all the yellin and shootin outside, but it was better to be safe than sorry.
“Fetch the sheriff!” Paladin told passers-by. “Shoot out at Hoffman’s! Cowboys gone buck wild!”
PCs declare actions. Sebastian has already declared his. Cowboys' actions will happen first, PCs' last.

Cowboy is off-balance from Miss last turn: +2 Sebastian is stronger: +1. No Brawling skill: +0. Using a pistol: +1. Cowboy 1 has Brawling skill 1: -1. Net is +3 for Sebastian. Rolled an 11 for the first attack, +3 = 14, Glancing Blow. 1 damage +1 for the pistol = 2 damage to Strength. The Severity of Wound column only applies to knife fights (and to shooting, of course).
However, Cowboys go first this turn. We have to see what happens with Cowboy 1 first attack. It may cause some different modifiers to the 11 roll. Same for the 9 roll.
I think it's good that you posted both of your attacks and both rolls. That way we can the NPCs can do their two rolls too and we can resolve the whole turn at once. Let's do it that way going forward.

Andreas Larson stays against the wall and watches Hoffmann - if the owner lowers his weapon and/or shoots, Andreas will draw his gun for the next round and aim at the drunks.

Paladin - Turn 3
As several passers-by excitedly raced for the sheriff upon hearing Paladin, he stepped back into Hoffman’s.
A classic barroom brawl in the making, as the young bucks ignored reason and civility. Paladin sighed and shook his head. He had no horse in this race, as long as fists didn’t turn into bullets.
Giving the remaining players some time to post.
Then will post a GM post tomorrow (Saturday) evening resolving Turn 3.

A horseman riding in the street stopped his horse and said to Paladin, Mister, I expect that the sheriff will come shortly. Half of the town heard them gunshots and that whooping. But I'll ride over to the office and make sure he's in town. He turns his horse around and spurs it into a trot.

The cowboy eyes Sebastian's knife hand and sees any opening. He and swings a fist and again misses. Sebastian comes back with a gun butt over head, a glancing blow that knocks the cowpoke's hat off and raises a little cloud of dust from it. The cowboy grunts comes back with his own hot-from-firing pistol, the barrel hitting Sebastian's face at an angle. Sebastian answers with a second pistol butt blow glancing off of the side of the head.
Cowboy 2 hears Jake McCall's warning about the expense involved in further busting up Hoffman's. It makes sense to him. He stops his attack on Jonathan Doos and says, You can meet me outside after I have a drink, old man. If you have the guts fer it.
Cowboy 3 slurs out a yell. Didja see that? Harvey come in with a fist and that feller come back with a pistol butt!
Cowboy 4 says, Yeah, low down dirty pool!
Cowboy 5 is a little wobbly. He leans on his horse with his pistol hanging from his hand and watches the fight.
Cowboy 6 hears Jake McCall's admonition, holsters his pistol, and watches the fight.
Cowboy 7, the older one, holsters his pistol and watches the fight.
Young Dan Rucker on the porch hears the sound of fighting and turns to look into the saloon from the door.
Hoffman continues standing behind the bar with his sawed-off shotgun held across his chest. His son continues standing in the kitchen doorway with his Long Tom shotgun's barrel lowered.
Charlie continues to watch and cover his friends
Andreas Larson watches Hoffman. The hotel-saloon's owner doesn't make a move with his weapon.
Jonathan says, Drunk and disorderly, Assault, Assault on a Judge, stay down you drunken Bas--rd.That's assuming that Jonathan cancels his attack when the cowboy disengages. He doesn't have to.
Paladin, having sent for the sheriff, runs back into the bar, alert and ready for action, if needed.
Cowboy 2 steps back, away from Jonathan.
Cowboy 1 - Roll for Coordination to brawl a knife-wielder. [1d20]=2 Succeeds. Brawl roll - [1d20+1]=1+1=2 Miss. Temporary +1 to Sebastian's Strength. Coordination roll for second attack - [1d20]=4
Both Sebastian and Cowboy 1 add an extra +2 to their next attacks (+1 for each Glancing Blow received). Sebastian took 2 damage to Strength.
Movement happens after everything else (for example, Cowboy 2's movement).
Going forward mostly won't show NPC rolls, just to save some GM time. I'll show any really crucial ones, though.

Cowboy 1 will continue brawling with Sebastian.
Cowboy 2 will watch the fight (assuming Jonathan didn't continue his grappling attacks. If Jonathan did, he'll brawl Jonathan using fists).
Cowboys 3 - 7 will watch the fight. They're standing and holding their horses' reins. Cowboy 3 will yell, Put down that knife and fight fair, feller! Cowboy 4 will yell, Yeah, put it down! Ye bottle-shootin, cup-chunkin s.o.b.!
Cowboy 8 Dan Rucker will watch the fight from the porch.
Hoffman will still stand behind the bar with his shotgun. His son will continue to stand in the kitchen with his shotgun.

I am tempted just to shoot the guy, but wanting to avoid bloodshed, will settle for coshing him instead.
For a bit of extra flair I will juggle the dagger and revolver from one hand to another, just to keep the Cowboy guessing with which hand I will lunge at him.
With the sheriff successfully summoned and the majority of cowboys starting to stand down inside the bar, Preacher John remains on the porch, a hand on the shoulder of Young Dan Rucker. He continues to talk to the boy to build rapport, ensuring he knows it is good judgment to hang back from the scuffle and perhaps he can aid his friends better this way.

Using my last roll for Cowboy #1
Characters can walk 6 yards per combat turn or run 24. A run would easily get Joos behind Cowboy 1 in Turn 4 (this turn). Movement happens after all attacks. So the attack would happen in Turn 5. We can use the rolls you already rolled.
I think this rule should apply if attacking from behind: "If the character being attacked is in a position to defend himself, his Brawling score is deducted." (p. 43) Cowboy 1 is busy with Sebastian and not in much of a position to defend himself from a rear attack. So the -1 for Cowboy 1's Brawling skill wouldn't apply.

Young Dan must have seen plenty of fights before, because rather than watching the action, he'd rather take the chance to speak with the minister. He says, Reverend, the boys in the bunch are good men, but they do things that the Bible says you shouldn't do. For example, committin adultery with painted ladies and soiled doves. And they strung up two horse thieves once, but I don't know if the commandment about "Thou shalt not kill" applies to horse thieves. Do you think it does, Reverend? And the church people say that drinking whiskey and beer is a sin. And they also say that jist dancing with dance hall girls is a sin. Is it, Reverend Carry? What does the Good Book say about them things? About everything the bunch likes doing, the church people say it's wicked. Do you think my friends are going to hell?
