After scouting out back exits available to patrons and getting the lay of the land, Dmitri will return and find Terry. He’ll order a couple beers and pretend to not know Alphonse.

Rando is out back seeing to the call of nature.
He passed the door-scan by the simple expedient on not carrying a weapon - unless you count a roll of Cr1 coins.

The red crosses represent doors, besides the restrooms you're not sure what's beyond any of them. Counting Clockwise there are 11 doors. The door at the 12 O'clock position is number 1. Doors 9 and 10 lead to the rest rooms. Door 1 and Door 4 are emergency fire exits and clearly marked as such.

Having made it inside and done a cursory look no one spots Fendon. Everyone has a "cover" drink

Dmitri would be most interested in doors 12, 2, 3, 6 and 8. Are any guarded?
If not guarded, he’ll try door 8. If it’s unlocked, he’ll open it and stumble in acting a bit tipsy. He’d try to avoid any prolonged overt contact with Rando. He’d probably “hang” mostly with Terry as they worked as crew on the ship together. Kind of natural they would associate off ship together. To communicate, he’d walk past Rando or Alphonse and say something without looking at them then move in quickly. He’d ensure Terry knew of and watched his try at door 8

Great place, good music, I just arrived on planet is there any chance that there is a quieter area where more more competitive pursuits are available, I'm too tired for the dance floor tonight

The barman smoothly pockets the cash and smiles. “Welcome and glad to be of service. The sports book is through that door (pointing at #7-corrected). We’ve a couple of card rooms for private games too, just beyond the bar there, and there (pointing at #2 and 3).

Dmitri shuts the door and tries not to attract further attention. He’ll join Terry and take up a seat at or near the bottom right bar to observe doors 6&7. He’s trying to get a feel for who enters/exits these doors and tries to peak inside. He’ll also be observant of people transiting door 5 to get a feel for what that room might be.

Dimitri’s foray into the dressing room passes unnoticed. Taking a strategic seat he starts watching the doors. He sees some waitresses come and go with trays of drinks from the bar. Occasionally a patron enters or leaves but it’s pretty light foot traffic. There isn’t a guard at either door.

I'm assuming the door the wait staff uses is door 7 and the one that patrons occasionally enter/exit is door 5?

As there doesn't seem to be any luck with the "Just Wait" strategy, Rando takes a look at how the doors are marked and the wear patterns in the flooring. Which doors seem to be frequently used? Which are marked "Staff Only"? Which have been used by the bar staff to collect Food, Bottles, etc? Those that have been used...what could be seen through them when they passed through?
Based on the outer structure, which of these doors seems likely for Stairs and which has space for larger rooms?

In case people missed it earlier in the thread - Card rooms are located through doors #2 and #3. There is a Sportsbook through Door #7 (corrected).

Starting "clockwise" (the door at 12 o'clock is #1), the door behind the bar #6 looks like staff only. Dimitry doesnt think this guy will be in the Sportsbook, but he will walk in and look around just to rule it out. He’ll make sure Terry knows where he’s going.

Alphonse discretely tries to catch the eye of the others and uses through door #3
Staggering slightly and slurring "Don't worry I won't lose it all!" he quickly scans the room for Fendon.
If he sees him he'll pull himself upright and smile broadly, he'll stagger in shaking his head before letting the door swing closed.
"How can I take your money away tonight?" he chuckles almost incoherently making his way shakily towards an open seat.

Taking his drink, Rando moves towards the seating on the north wall (Via Terry). Anyone trying to escape the gaming room will be heading for an exit and those seats are between door 2 and the discrete exit at door 1.
To Terry - I'm assuming anyone Alphonse spooks will come out of door 2 and head for the fire exit. Dimitry can cover the steps into the main room at that end...can you cover the other steps opposite Door 3 that lead to the main entrance and the other fire exit just in case they go that way?
He mentions his plan to Dimitry as he passes
And you can cover these steps, right? Don't want him going out the front.
