Usually* copper coinage shows up in my games due to two reasons. Firstly, random treasure rolls. Secondly, verisimilitude. Addressing the second point, if the PCs were to roll some guy and search his wallet, it will probably have a few copper coins---it makes sense that the guy would head out with some pocket change. It would be the equivalent of say, mugging some working stiff in a modern-day game and finding that his wallet has his ID, a few maxed-out credit cards, and a couple quarters for the parking meter.
*Possible exceptions could be something like the world's stingiest dragon carefully curating a copper hoard, with his thought process being that even if adventurers kill him, good luck on getting all that coin back to civilization.

Meh. I still think it's something we can throw around to the locals to distract them or disrupt a pursuit. It's worthless to us, not to everyone.
