I had the same question myself

if levelling up gives you more spells, just choose from the appropriate list.

For Elijah, you just get granted an additional 1st level spell.

For Pocc, you receive the mysteries of the second level revelations and can cast any spell from the complete list. You just choose each day which one you think by divine inspiration you will need to use. So add all the spells to your spell book notes.

For Siggard, you receive the ability to cast another 1st level spell, choose from the list which one you prefer to learn.
