Rules talk:
The Rhino plan might be a two round plan.
Round one: Drinking the potion takes 1 segment. The potion then takes 2-5 segments to take effect. Then, it takes 5 segments to polymorph into a rhino.
Round two: Charge with movement, and then attack an exterior wall.
In terms of attacking a barn wall, I think we'll use the Saving Throw Matrix for Non-Magical Items on DMG p. 80. I'll rule that if the wall fails its Saving Throw, it means you've created a man-sized hole from which to escape.
For the barn wall, we'll use "Thin Wood."
The attack definitions say a "normal-strength" person delivers a "Normal Blow." An ogre or giant delivers a "Crushing Blow." I'll rule that a charging Rhino will qualify as a "Crushing Blow."
But the rest of you probably fall between the range of a "normal strength" person and an ogre.

Or maybe a large burrowing creature that could rapidly dig a tunnel? If we did it right, we could maybe even dig a tunnel to a different building and the villagers would think we're all dead because they didn't see us leave the barn. That could give us a few days to lie low and recover HP.

Purple Worm has a move of 9". Though you would be small for a Purple Worm and I don't think we would be able to follow afterwards. If we were able to move through the tunnel made by our polymorphed friend the tunnel might not hold and collapse upon us. If I had a bottle of polymorph I would change to one of the following: an Air elemental, Water Elemental, Fire Elemental, or an ooze. Those creatures would easily escape through the cracks in the barn wall.

I'm sure I could have been long gone by now if I didn't care about the rest of you so much.
Lets resort to brute force here and save the potion for real emergencies. (like maybe the next encounter?)

Once you're outside of the barn you could open the door and hopefully scare off the enemy. You can change shape as much as you want for the duration of the potion. In a worse case scenario at least you could live and allow the adventure to continue. If we all die, the game is over. That's was my thought. Whatever creature you morph into you only get their mode of locomotion and not their abilities. Your strength will not increase.

If only we knew what charmed them, maybe Bo could change into that. That would be interesting.
But realistically, I don't think the fact that it'll take two rounds makes the polymorph plan feasible. Plus, we need Bo able to cast entangle, which I'm not sure he can do while shape changed. Looks like trying to bash down a wall is our best shot at the moment.

I don't know if we have time to still pull this off but morphing into a fire elemental is the best option for poylmorphing. Once the PC is outside the east door the polymorphed PC could unbar the door without raising to much suspicion. The attackers outside would only perceive flames engulfing the door and doubtful they would know it was a poylmorphed PC.

I thought about something like that too but, if the polymorphed pc doesn't obtain the new creatures abilities, wouldn't the fire burn them in any form?
I guess I wasn't thinking that you could continue to switch forms from one thing to another. Hmmmmm...

Just don't roll a 1 in order to hit the wall with a bludgeon or axe.
I'll roll the Wall's saving throws. Chubby, a higher number for Crushing Blow (13) vs. Normal Blow (6), means its harder for the wall to survive the crushing blow. It must roll a 13 or higher to survive a crushing blow, whereas for a normal blow it only needs to roll a 6 or higher to survive.
Smart to arm Grothnak in this effort! If Telkis has a hand axe, he can give it to Ingrid.
I'll try to get my new post out today.
